I feel like I’m giving away the crown jewels here. Out of the hundreds of recipes I have tried in the slow cooker, this slow cooker Cuban roast chicken recipe easily comes in my top 5. It might even come close to being my favourite ever. But I’m a generous kinda girl so here it is 😉 It’s sunshine food; the kind you need when you just thought you’d made it through to spring and then the thermometer blew a raspberry at you and dived to sub-Arctic again. Take me to da island!
This dish is just a riot of different flavours, all dancing the salsa together. I bored my husband silly by going on and on about how delicious the sauce and the stuffing were but he’s asked me to cook it several times since and we’ve done it for some of our favourite people including my friend’s 40th which we catered for. It’s a little more involved than some of my other recipes but not difficult in any way.
I am going to be bossy on just this one occasion though and suggest that you follow the instructions very carefully. This recipe involves stuffing a chicken with pre-cooked rice and, if you get this wrong, the chances of getting food poisoning from the rice are a little too high for my liking. And I wouldn’t want to inflict that on you, given how delicious this is.
